Sizzling Summer Fajitas to Cook on Family Grill Night

The summer season lends itself as a time for the scent of deliciously grilled food in the air and nothing drives our kids crazy like knowing we are grilling up some chicken fajitas! With a little prep in the kitchen you can transport your dinner table to any outdoor venue using the Blackstone Tailgater grill. Because of the collapsable legs, it folds down and even comes with a carry case to make transportation easy to take along to the park (one of our kids favorite destinations), the game, or the beach.

One part grill, one part griddle and one part burner-direct cooking, the Tailgater portable cooking station makes it simple to grill burgers while griddling onions and bacon, or remove the grill box and use the burner beneath to pan fry, pot boil and more. On our Blackstone Tailgater like to use the griddle to sizzle up our fajitas!

This recipe is our family favorite and even spices up a backyard party.

Homemade Fajita Seasoning

-1 tablespoon cornstarch

-2 teaspoons chili powder

-1 teaspoon salt

-1 teaspoon paprika

-1/2 teaspoon onion powder

-1/2 teaspoon garlic powder

-1/4 teaspoon cayenne pepper

-1/2 teaspoon ground cumin

-1 teaspoon white sugar

Fajita Instructions

-Chop up your veggies.

-Fill up your liquid dispenser bottle from your Blackstone Griddle Accessories Tool Kit about 1/2 way with water, you’ll need this later while cooking.

-Pre-heat grill for 3-5 minutes

-Spray a generous portion of olive oil on the flat top griddle.

-Add sliced chicken to one half of the griddle.

-Let cook for about 2-3 minutes and flip chicken strips.

-Add fajita seasoning to chicken and stir, squirting water from your dispenser to mix the seasoning and coat the chicken. (Our homemade fajita seasoning recipe is below or get pre-made package).

-Add veggies to the open side of griddle. (Optional: add onion slices as desired).

-Continue to stir every few minutes until veggies are at desired consistency.

-Turn the heat to off and turn off the propane tank.

-Remove all of grilled food to one plate and it’s ready to serve!

Bring along any toppings you’d like in a cooler too; guacamole, shredded cheese, sliced tomatoes, sour cream and more. Any way you slice it, this is a great recipe to get the summer party started!
