2 1/2 lb. long narrow yams (red-skinned sweet potatoes; about 4), peeled, cut into 2-inch chunks
1 tbs. extra-virgin olive oil
1/2 cup pure maple syrup
- Preheat oven to 400F.
- On baking sheet, toss yams with oil to coat. Sprinkle with salt and pepper. Bake 30 minutes, or until yams are almost tender, turning after 20 minutes.
- Drizzle maple syrup over yams and turn to coat. Bake 15 minutes longer, turning and coating in syrup occasionally, or until tender and golden brown.
