Maple-Candied Yams

Serves: 4

Prep Time: 10 minutes

Cook Time: 45 minutes

2 1/2 lb. long narrow yams (red-skinned sweet potatoes; about 4), peeled, cut into 2-inch chunks

1 tbs. extra-virgin olive oil

1/2 cup pure maple syrup

  1. Preheat oven to 400F.
  2. On baking sheet, toss yams with oil to coat. Sprinkle with salt and pepper. Bake 30 minutes, or until yams are almost tender, turning after 20 minutes.
  3. Drizzle maple syrup over yams and turn to coat. Bake 15 minutes longer, turning and coating in syrup occasionally, or until tender and golden brown.
  1. This is fantastic and used the Maple Walnut syrup from the pancake set I bought from your line of products! Please come up with a pancake pan, round or square, indented with several places to make several pancakes at once. Thank you!
