I’ve never met a chocolate recipe I didn’t like. Chocolate can do no wrong, am I right? It’s like a girlfriend that’s there for us when we need it most. To celebrate all things chocolate I whipped up mini double chocolate cookie cakes with peanut butter frosting (and additional chocolate chips for garnish, of course). I had to give a tiny bit of love to peanut butter because it’s chocolate’s bff. These mini cookie cakes are perfect for gatherings, birthday parties, and for no reason other than to enjoy them yourself. Grab the simple recipe and must have baking items below.
When my husband came home from work and spotted these on the kitchen counter he said, wow. Yes, they look pretty and taste even better! While I am interested in chocolate recipes of all varieties including the ones that take an hour to create, I prefer a quick recipe when I’m having a chocolate craving. This has got to be one of the fastest and easiest recipes I’ve created to date. Thanks to the Flap Jack mix I had very little work to do on my end.
So what makes this recipe double chocolate? The Flap Jacked mix is double chocolate with mini chocolate morsels throughout AND I added chocolate to the peanut butter frosting too. Chocolate on chocolate on peanut butter on chocolate. I’m totally making dreams come true here. These cookies are protein packed which offers you a sweet treat that truly fills you up appropriately.
Supplies
–Flap Jacked Double Chocolate Cookies
–Wolfgang mixing bowls (rubber bottom gribs so the bowls don’t move while you mix!)
-Mixer
-Glass cup (to create the mini cakes)
Instructions
-Make the Flap Jacked cookies as directed.
-Instead of placing the cookies on a baking sheet, pour the batter in a 9×9 baking dish.
-Bake as directed and add additional minutes if needed due to the increased thickness.
-Allow the cookie cake to cool.
-Using a glass cup cut out mini cookie cakes by using the top of the cup as your cutter.
-Set aside and make peanut butter chocolate frosting
Peanut Butter frosting
-¼ cup softened butter
-1 tsp vanilla extract
-2 tbsp milk
-1 cup of powdered sugar
-1 cup of creamy peanut butter
-Dash of salt
-2 tbsp melted chocolate
Instructions
-Combine butter, vanilla extract, milk, and peanut butter.
-Mix well.
-Slowly add in powdered sugar.
-Finish by adding melted chocolate.
-Decorate your mini double chocolate cookie cakes with peanut butter frosting. Add additional chocolate morsels if desired.
