A Colorful Labor Day Cake Recipe to Help You Celebrate the Last Days of Summer

There are rules on what to wear after labor day, but there are no rules on what to eat on labor day, score! To celebrate the strength, prosperity, and well-being provided to our country through hard work, we give honor with Labor Day. While they are no strong rituals on this important day we should still take time to celebrate with friends and family. Let’s take the day off to relax, be thankful for what hard work provides, and share cake with friends. Who’s in?

When I think of Labor Day treats I think of fresh fruits and vibrant colors. With that in mind I created a labor day blueberry cake that’s sure to be a hit. Filled with blueberries and garnished with strawberries this is the perfect end of summer treat to have a few times before fall arrives. Ingredients:

2 ½ cup of flour (all purpose organic)

1 tbsp salt

1 tsp baking soda

1 tsp cream of tartar

2 cups of sugar

2 sticks of butter (soften, not melted)

3 eggs (room temperature)

1 tbsp vanilla extract

½ cup of sour cream

½ cup of milk

1 cup of blueberries (and extra for garnish)

Strawberries (for garnish)

For the glaze:

2 sticks of butter (soften, not melted)

5 cups of powdered sugar

1 tsp vanilla extract

Instructions:

1. Preheat oven to 350 and lightly butter the Food & Wine bundt pan

2. Combine flour, salt, baking soda, and cream of tartar (my favorite ingredient to add into cakes with the perfect measuring spoons to give just the right fluff). Set aside.

4. In a separate bowl combine the sugar and butter, blend well with a mixer.

5. Add in eggs and vanilla extract, blend well with mixer.

6. Add in milk and sour cream and stir or whisk together.

7. Slowly combine the wet and dry ingredients together, mixing by hand.

8. Add in 1 cup of fresh blueberries and mix together using the mixer (this crushes the blueberries and helps to mix them in smoothly, but don’t over mix the batter).

9. Pour into the bundt pan and bake for 1 hour or until golden brown.

10. Remove from heat and allow the cake to cool completely.

Icing Instructions: 

1. Prepare the icing by combining the powdered sugar, butter, and vanilla extract.

2. Warm the icing for 10-15 seconds and pour it over the cake (be sure to place the glaze on the top of the cake allowing it to fall down the sides of the cake slightly).

3.  Garnish the cake with additional blueberries and fresh strawberries.
