Sweet and Zesty Spring Salad With Homemade Dressing

Spring is here! This is one of the most gorgeous seasons; the weather, the flowers blooming, and most importantly the spring inspired food. If you’re looking for a seasonal salad to serve to your favorites I have you covered. I whipped up a sweet and zesty spring salad with a homemade dressing, a must try seasonal eat. If you haven’t tried gorgonzola in a sweet based salad you’re missing out! The tangy cheese adds an extra dose of flavor to all the other items, making it the perfect sweet salad compliment. If you’re not sold on using such a strong cheese try a small amount on an apple slice with an almond, those 3 items alone are magical together.

Ingredients:

Lettuce of choice (I prefer Romain)

1 Cucumber (cut with a spiro)

Strawberries, sliced

Blueberries

Applies, sliced

Almonds (whole or sliced)

Gorgonzola cheese

Every salad requires a dressing and this sweet salad deserves a dose of zest. I had one goal in mind for this salad, the perfect zest for all salads. This recipe will work for just about any recipe, but I find that it favors a sweeter version. Now let’s make the zesty dressing to complete your spring salad.

Strawberry Vinaigrette Dressing

Serving size: 1 large salad, or 4 small appetizer size salads

3 tbsp white vinegar

3 tbsp olive oil

1/2 tsp mustard

1/4 tsp dill weed

4 cut strawberries

Combine all ingredients and stir. Serve with salad serveware.

Prior to serving stir the dressing again to mix the ingredients as the oil separates. If you need additional dressing you can easily add to the mix you already created before it runs out giving the strawberries additional time to soak up the ingredients. Keep the dressing in a sealable container and refrigerate. The dressing should last at least 1 week.
