Tonight’s Healthy Dish: Soy-Lime Steamed Arctic Char

Soy-Lime Steamed Arctic Char with Grapeseed-Oil Flash

1. Set up a steamer. Place the banana leaf or other leaf or paper in the top part.

2. Season the fillets lightly with salt and pepper and transfer to the steamer skin side down. Sprinkle evenly with the ginger and top with the lime. Drizzle with the 2 tablespoons of soy sauce and steam until the fillets are medium-rare, 8 to 10 minutes, or just cooked through, 10 to 12 minutes.

3. Meanwhile, in a small saucepan heat the oil to the smoking point. Very carefully, standing back to avoid splatters, use a tablespoon to spoon the hot oil over the cooked fillets in the steamer. If using a bamboo steamer, serve from it. Otherwise, transfer the fillets with the banana leaf, or alone if other leaves or parchment paper were used, to a platter. Drizzle with the soy sauce and serve.
