Smoky Barbecue Burgers

Make-Ahead: Barbecue sauce can be made up to 3 days ahead, covered and refrigerated.

Ingredients

1/2 cup ketchup

2 tbs. Dijon mustard

2 tbs. light brown sugar

2 tbs. molasses

2 tbs. unsalted butter

2 tbs. Worcestershire sauce

1 tbs. apple cider vinegar

1 chipotle chile in adobo, finely chopped

Four 5-oz. frozen beef burger patties

1 tbs. olive oil

4 hamburger buns, toasted

1 dill pickle, thinly sliced

1/4 white onion, thinly sliced

Method

  1. In small ovenproof saucepan, whisk ketchup, mustard, sugar, molasses, butter, Worcestershire, vinegar, and chipotle. Place over medium heat and cook sauce, stirring occasionally, for 5 minutes, or until it has thickened slightly. Season with salt and pepper.
  2. Prepare grill for medium-high heat.
  3. Season patties with salt and pepper. Grill frozen patties about 4 minutes. Turn patties over, brush with some barbecue sauce, and grill about 4 minutes for medium-rare doneness.
  4. Place burgers on bun bottoms. Spread more barbecue sauce on burgers, if desired, and top with pickles, onions, and bun tops and serve. Save any remaining barbecue sauce for another use.
