3 Fruity Cocktails for Your Spring Party

Spring is in the air, and there’s no better way to celebrate than with fresh, and festive, bright drinks!

From fresh lemonade, infused with a Thyme Simple Syrup, to a crisp pitcher of in-season strawberries smashed with mint and gin, to a tasty Blackberry Bramble; you’ll be ready to entertain this spring, all season long!

The not so secret tip to making a pitcher of perfect lemonade, is juicing fresh lemons, and lots of them! I like to use an electric juicer, over a hand tool for a big pitcher like this. It takes less time, no hand cramps!

What I love about this recipe, is that you can make the simple syrup ahead of time, and chill in a carafe, so when you’re ready to mix, the syrup is already chilled, and infused with fresh thyme

Spring Thyme Lemonade

Makes 1 pitcher, approx 8 cups

Ingredients:

Lemonade:

  • 2 cup fresh squeezed lemon juice
  • 4 cups water
  • 3/4 cup – 1 cup thyme infused simple syrup

Thyme Infused Simple Syrup:

  • 1 cup water
  • 1 cup sugar
  • 4 sprigs thyme

Instructions:

Lemonade:

  1. In a pitcher, stir together lemon juice, water, and thyme simple syrup. Add more syrup depending on taste preference. Refrigerate. Serve chilled with ice. Garnish with a slice of lemon and a sprig of thyme.

Thyme Infused Simple Syrup:

  1. In a medium saucepan, combine water, sugar, and thyme. Bring to a boil until sugar has dissolved. Remove from heat. Cover sauce pot and let thyme steep for 8-10 minutes. Remove thyme sprigs and allow simple syrup to cool to room temperature. Transfer to a carafe, and keep chilled in the fridge.

Strawberries are in season right now, and they’re the perfect fruit to showcase in a delicious cocktail, like this Strawberry Gin Smash; muddled with fresh mint leaves, and gin, the pitcher turns a festive shade of pink, the longer those berries sit, and soak in the flavors.

Strawberry Gin Smash

Makes 1 pitcher, approx 8 cups

Ingredients:

  • 2 tablespoons sugar
  • 2 limes, juiced
  • 1 pound fresh strawberries, hulled and sliced
  • 2 cups gin
  • 3 cups club soda
  • Fresh mint sprigs, for garnish

Instructions:

  1. In a large pitcher, muddle the sugar and limes. Hull and slice the strawberries and muddle the slices lightly with the sugar and lime juice.
  2. Stir in the gin and club soda. Add mint sprigs to garnish. Pour into ice-filled glasses and garnish with a strawberry, if desired.

A bramble of any kind is one of my favorite cocktails to order out this time of year, but making at home, is even better! Fresh blackberries, gin, and blackberry brandy (though any brandy will do) garnished with mint leaves, is an absolutely refreshing cocktail you’ll want to sip on the porch, as the sun goes down.

Blackberry Bramble

Serves 4

Ingredients:

  • 8-ounces gin
  • 4-ounces blackberry brandy (or flavorless brandy)
  • 2-ounces freshly squeezed lemon juice
  • Club soda, to garnish
  • fresh mint sprigs, to garnish
  • blackberries for garnish

Instructions:

  1. To a glass, add 2 ounces gin, 1 ounce brandy, and a generous pinch of fresh lemon juice. Mix to combine.
  2. Top glass with club soda, and garnish with mint and blackberries. Repeat this three more times.
